Pizza Kale Chips


It is official, I am addicted to kale chips.  As far as I am concerned, they are essential to have on hand all the time.  I have been trying out new flavors each time, and it is actually kind of fun!  I never get bored that way, and I will know which recipes are keepers (that I share with you).  


The last one I decided to try was pizza flavor. One of my coworkers at the deli had made a pizza for our hot food bar and it smelled really good...so I got to wondering how pizza flavored kale chips would be.  They turned out pretty darn addictive.  I made a raw "cheese" from sunflower seeds and nutritional yeast, added some onions, garlic, sun dried tomatoes, basil and oregano, and it seriously tasted like pizza.  Hmm...wonder what flavor for kale chips I will think of next?



Pizza Kale Chips
makes about 10 cups

1 cup raw sunflower seeds, soaked for 4 hours, drained
1/4 cup nutritional yeast
4 dried tomatoes, soaked and drained
1 garlic clove
2 Tbsp minced onion
1 Tbsp dried basil
2 tsp dried oregano
1 tsp sea salt ot to taste, plus additional for sprinkling (optional)
filtered water

1 bunch kale, washed and torn into bite sized pieces

In a food processor, combine the seeds, yeast, tomatoes, garlic, onion, herbs, and sea salt with about 1/4 cup of filtered water. Turn the processor on and process until smooth, a little more water at a time to create a smooth paste about the consistency of nacho cheese. Place the kale in a large bowl, and pour the mixture over. Massage the mixture into the kale with your hands until it is all coated, then place on 2 lined dehydrator sheets. Dehydrate at 115F until dry overnight (about 8-10 hours). Enjoy!

  3. Try adding some fennel seed next time - it takes the flavor over the top! :)

    Kale chips will never get old. I am happily addicted too!

    2. Hehe, far from it! I think kale chips are reason enough for people to buy a dehydrator. Can't believe how much they charge for them in stores when you can make them so cheaply and plentifully at home. :)

  4. Ok. Our local grocery store doesn't carry raw sunflower seeds or the nutritional yeast. Would anyone mind telling me where you are shopping? Specialty store? Health food store? Whole Foods? Any suggestions? ~

    1. I shop at a health food store, but co ops and Whole foods would carry them as well.

  5. I shop at my local Coop store where they carry healthy food, lots of organics, and bulk items. They have everything that is needed. You might try health food stores in your area. Good lucky and happy eating!

    2. Try Vitacost online. You can find pretty cheap organic things like raw sunflower seeds and nutritional yeast. Shippings is free over 25 dollars.

    Awesome idea - oregano is my favorite spice (it always makes me think of a pizza place that we went to when I was little). Hmm, if you need more ideas to try for kale chips, here are a couple random ideas (not that you ever seem to be lacking any, which is why I LOVE your blog!) :

    - Sriracha (spicy!)
    - Barbeque (if it's possible to do a raw barbeque-flavored chip)
    - Coconut-curry or peanut-curry flavor

    1. Holy Moly! I didn't know that dehydrating kale would take that long! By the way, did you put it in an oven? Or did you just leave it out to dry? I asked because you had a "115F" temperature and I was wondering where to do it. Is it like eating normal potato chips? They look quite tasty after all. I think you can pair them with a little dip on the side, perhaps aioli? I would definitely get a hold of this recipe and let my kids nibble on it!

    2. It does actually. I do not put it in an oven because that would be too hot to keep it raw. Just in the dehydrator. They get crunchy like potato chips. I hope you do try making them :)!

    1. Yes, bake at 200 for about 4 hours, then flip and do another 2 until dry (but they may be dry after 4, depends on the oven.)
