I love anything kale. It is no secret, because I am posting kale chip recipes, sweet and savory all the time...but I do love a good kale salad as well. Although I love it with Asian flavors, which is what is most often made, I enjoy it with some sweetness as well. Last weekend my Mom gave me a big bunch of kale from the farmer's market and I had bought a bunch of strawberries on sale so I though they would be perfect together in a salad for dinner!
I made a sweet and creamy lemon poppy seed vinaigrette, using hempseeds and almonds to make it silky and I knew it would be delicious with the kale because it was pretty darn amazing tasting before I even put it on the salad. I added beets, shallots, and pine nuts to the salad along with the kale and strawberries, and it was pretty, but even more importantly it was delicious! I was sitting there eating it with Eric and he kept commenting on how good it was. It may seem like an odd combination when you read the ingredients but it is one of those things that you will taste then keep going back until it is all gone it is that good.
Sweet Kale and Strawberry Salad
¼ cup raw almond or cashew butter
¼ cup raw hempseeds
2 Tbsp raw coconut nectar, or raw honey or maple syrup
2 Tbsp lemon juice
1 tsp cider vinegar
½ tsp sea salt
1/3 cup filtered water
¼ cup poppy seeds
2 bunches kale, washed and torn into bite sized pieces
3 cups sliced fresh organic strawberries
1 large beet, cut julienne
1 small shallot, sliced
3/4 cup raw pine nuts
In a high speed blender, combine all dressing ingredients except poppy seeds and puree until smooth. Stir in poppy seeds. In a large bowl, combine all remaining ingredients, then pour the dressing over and massage in with your hands until it is well coated. Serve!
